  2. Don’t know where you are, but here in my part of the south, usually St. Louis style ribs are spare ribs, and usually the rib tips (the part you are describing) are left on. It is up to the cook to trim them off or not. A lot of places will trim them off, split them into smaller pieces, cook them and sell as rib tips. They are delicious.
