For smoking or slow-roasting ribs using the 3-2-1 technique, it is ideal to cook them at a temperature of 225°F. This temperature ensures consistent results and allows you to master the easiest rib technique.
How To Cook Ribs On Charcoal Weber Grill?
To cook ribs on a charcoal Weber grill, follow these steps:
- Start by building a low-temperature fire on one side of the grill.
- Remove the grates and add charcoal, as well as soaked wood chunks if desired for a smoky flavor, to the side of the grill where you’ll be cooking the ribs.
- On the other side of the grill, place a foil pan filled with water to keep the ribs moist.
- Replace the grates, light the fire, and allow the grill to reach an even temperature of about 275°F.
- Throughout the cooking process, monitor the fire and add more charcoal as needed to maintain a constant temperature.
- While the fire is coming to temperature, prepare your baby back ribs by removing the membrane on the underside. You can do this by sliding a butter knife under the membrane along the last rib and pulling it up along the entire rack. Once done, generously rub the ribs with your homemade BBQ spice rub.
- Place the ribs on the prepared grill, on the side with the foil pan, over indirect heat. Cook for approximately 2 hours, rotating every 30 minutes to expose different edges to the hot side of the fire.
- After 1 ½ to 2 hours, tightly wrap the ribs in foil and place them back on the grill. This will help seal in the juices. Continue cooking for another 30 minutes or so.
- Unwrap the ribs from the foil. At this point, you have a few options: you can cut and serve the ribs, return them to the fire for additional char on the meat, or brush them with barbecue sauce and continue grilling to create a sticky layer of sauce.
- Once you’ve achieved the desired texture, remove the ribs from the grill, place them on a cutting board, and slice with a large, sharp knife.
