225 unwrapped for about 6 hours. I’ve messed with 123 ribs, half wrap, etc. Back to basics works best for me.

I usually do anywhere between 225-250 for ribs (I don’t try to tune it too much, but lower/raise it if it goes beyond those ranges)

225-250 is what I aim for. 3 hours unwrapped getting smoke. Then I wrap with butter for 2 hours, and then 1 hour unwrapped with at least 2 applications of sauce.
