I do mine at 160 for 24 hours. I would season it closer to a steak, if you really want to go above and beyond my favorite beef seasoning mix is salt, mustard seeds, red pepper flakes, rosemary, black pepper. Blend it all together in a spice blender then seal. I personally don’t think back ribs need a sauce rub but that’s just me.
