Mad Coffee Launches with Sustainable Bioplastic Pods and Flash-Chilled Specialty Instant Coffee

A new player has officially entered the booming “premium instant coffee” market—and it’s bringing a sustainability-first mindset to the table. On June 25, Mad Coffee made its debut, offering a novel way to prepare barista-quality coffee in just three seconds—whether hot or cold—while packaging it all in compostable, eco-conscious materials.

The brand is the latest venture from Genecis Bioindustries, a Toronto-based company known for its innovations in biodegradable plastic manufacturing. Genecis, which has earned support from high-profile backers like the Amazon Climate Pledge Fund, Khosla Ventures, and Y Combinator, is now applying its materials science expertise to the world of specialty coffee through the launch of Mad Coffee.

Fast, Flavorful, and Fully Compostable

At the heart of Mad Coffee’s offering are its signature “MadCups”—single-serve, single-use pods made from a biodegradable plastic that is engineered to break down in commercial composting facilities. Each MadCup contains enough premium instant coffee powder to make a 7- to 10-ounce beverage by simply adding water or milk. A thin foil peel-back lid allows access to the contents, though this aluminum layer may not be recyclable in all municipalities.

Unlike traditional instant coffees, Mad Coffee aims to combine convenience with craft, joining the growing category of so-called “craft instant” or “specialty instant” coffee products. Once considered an oxymoron, the idea of high-quality instant coffee has now gained traction among consumers who crave both quality and speed.

Mad Coffee’s entry joins brands like Swift Coffee (formerly Swift Cup) and Cometeer in reshaping how specialty coffee is consumed on the go. Swift, based in Pennsylvania, produces instant coffees for a range of U.S. roasters, while Cometeer delivers frozen coffee capsules developed in collaboration with top-tier specialty roasters.

A Unique Process with Barista-Backed Expertise

What sets Mad Coffee apart is its proprietary LyoExtract™ technology, which it claims results in a superior taste and texture. The process begins with slow brewing at controlled temperatures, preserving flavor complexity. This is followed by a rapid flash-chilling step within 60 seconds of the coffee being brewed. The chilled coffee is then vacuum-dried for 24 hours, transforming it into what the company describes as “pure, snow-like crystals” that dissolve instantly in liquids.

This entire approach is designed not only to deliver quality but also consistency. As Mad Coffee Founder and CEO Luna Yu explained in an interview with Daily Coffee News, “Every pod delivers a perfectly portioned, barista-level experience with zero guesswork. This format also dramatically reduces food waste and allows for on-the-go consumption.”

To ensure top-tier flavor, Mad Coffee partnered with seasoned coffee expert André Eiermann, a longtime industry veteran and the 2017 Swiss Barista Champion, during product development.

Ethically Sourced and Carefully Roasted

Mad Coffee takes sourcing seriously. While specific farms and co-ops weren’t disclosed, the company confirmed that it works directly with smallholder farmer cooperatives in Colombia, Ethiopia, and Yunnan, China. All coffees are roasted in Yunnan, where the company has stationed a full-time quality assurance team to monitor freshness, roast profiles, and traceability.

“This close partnership with coffee collectives, roasters, and local Q Graders ensures that every batch meets our high standards for flavor and sustainability,” said Yu.

Retail Expansion and Future Plans

Currently, Mad Coffee sells 12-pack boxes of its MadCups directly through its website. But the brand is also gearing up for a significant retail rollout. Two signature flavors—Classic Cold Brew and Americano Iced Coffee—will be hitting shelves at more than 400 Sprouts Farmers Market grocery stores across the United States. These will be available in 8-packs, priced at $14.99.

Looking forward, the company is considering broader packaging formats. “We’re exploring larger formats and bulk refill options as part of our long-term roadmap,” Yu said. “That will allow us to serve more diverse use cases while staying aligned with our mission of reducing waste and supporting sustainable consumption.”

Mad Coffee’s launch represents more than just a product debut—it signals an evolution in how consumers perceive and enjoy instant coffee. By marrying cutting-edge food science, eco-friendly packaging, and specialty coffee quality, Mad Coffee is not only entering the competitive premium instant market but also pushing its boundaries.
