  1. No, none of those cuts work well for pulled pork because they’re very lean and don’t have much fat and connective tissue. You’re much better off finding other recipes for them.

    • There is not enough fat for pulled pork. You would be better off making a pork chop sandwich!

      I have made carnitas using pork loin country style ribs, but I am cooking them in a Sous Vide. Still, they can be a bit dry compared to those cut from the pork shoulder/Boston butt.

      FYI, this is a good technique to have lower calorie carnitas for burrito bowls or burritos. They are not braised in oil.

  2. I use boneless loin for pulled pork. It’s not as heavy so less sleepy after lunch. Pork chop and medallion are components of the loin and would work fine imo. Esp in a pressure cooker/instapot.

    • My partner does a jerk pulled pork tenderloin and use the bulk of it for tacos and nachos and it’s amazing. But I do agree, I would not try to make pulled pork out of pork chops. I would just make pork chops. Lol
