If you want your ribs more tender than what you’re getting by just smoking them, look up the 3-2-1 method. Basically, you smoke your ribs for 3 hours, then wrap in foil with a little apple juice and grill for 2 hours, then finish them unwrapped and with sauce for an hour.

I like to combine apple cider and apple cider vinegar for marinating pork. I would use about 1 cup cider and 1/2 cup apple cider vinegar for pork ribs or ratchet up from there.
